I really need to eat more veggies. Any suggestions/recipes to healthily incorporate more into my everyday diet?? Thanks!

I recently started to eat more zucchini and yellow squash. I just slice it up and saute it w/a little EVOO and sprinkle w/lemon pepper. I have even made veggie kabobs that my husband will put on the grill.......zucchini, yellow squash, red onion, bell pepper, pretty much whatever you want.0

It is my impression you are eating too much meat. If you are eating the meat for protein, I would suggest replacing the meat eaten for a meal (e.g. lunch) with an equivalent amount of beans (i.e. 4 oz meat == 8 oz beans). Other suggestions: replace a bread serving with potatoes or sweet potatoes; add spinach to a smoothie; carrots and hummus (beans) for a snack. I also increase my veggies by being completely vegan on Wednesday and Friday.0

I recommend smoothies! The Green Monster smoothie is easy to make and you get 4 whole cups of spinach... Add some berries to the recipe and voila!
I got this recipe from Iowa Girl Eats:
4 cups spinach
1 banana, cut up & frozen
1/2 cup plain Greek yogurt
1/4 cup vanilla almond milk
1 tablespoon peanut butter
I would add frozen berries to it also.0 -

I eat veggies all day long ..... my breakfast log shows red peppers as well as oatmeal (I'll eat the peppers either before or after, not with LOL) ,,,,,, and often have raw veggies with a little hummus for snacks or lunch.
Today I made turkey-veggie-chili in the slowcooker ..... a pound of ground turkey, with a ton of chopped onions & green peppers, sauce & seasonings. Usually we have rice with the chili, but hubby didn't want rice .... we had some chopped kale & string beans, ladled chili over it & called it a day. Sounds weird, but we don't care :drinker:
Thinly-sliced zucchini, or cookws-up spaghetti squash, in place of spaghetti ...... ladle some meat & veggie spaghetti sauce over it & sprinkle with a bit of parm over it ..... heaven !
Roasted & grilled veggies are phenomenal ..... a little bit of olive oil & herbs & seasonings .... you can eat them hot or warm ..... or even cold with some balsamic vinegar in a salad.
