Some vegetables are fine raw, unless you eat way more than a reasonable person would.
Eggplant? It's a nightshade. It has trace amounts of an alkaloid (iirc) in the fruit itself. So massive amounts might make you sick. But we're talking a ton of it. Same with potato.
Spinach can cause iron issues and other things like kidney stones...*if* you eat a crapload of it.
But with anything, just don't eat a heap of it and you're fine. Too much water can even kill you.0 -

If a tomato is a fruit is it OK to eat raw?
Tomatoes are like apples to me. I eat them raw all of the time! In fact, just had some cherry tomatoes from my garden by the handful (heavily washed, of course!) All veggies/fruits are things you can eat raw, just some happen to taste better cooked in my opinion0 -

I'm eating a raw vegan diet. I eat everything raw.
However, I don't eat any vegetable that must be cooked, like potatoes, and eggplant.
I occasionally have raw corn too, it's delicious. I know other raw foodies that eat potatoes, and eggplant.
I don't like the way they taste...0 -
Soybeans are the only vegetable I'm aware that require cooking before eating.
It really depends on what you choose to classify as a "vegetable" or not. As can be seen in this thread, not everyone agrees. The technical definition is "an edible plant," so potatoes, eggplants, soybeans, corn, all vegetables.0 -
I have never heard of any veg being unsafe, unless not handled properly. If you have a concern about something in particular, I would say consult your doctor or a nutritionist. You can't believe everything you read on the internet, most people think they know more than a trained professional.0

I'm really amazed there are so many posts about raw potatoes. We eat them raw fairly frequently. Every time I'm cleaning/cutting them to cook, my boys take a whole one and eat it raw. I, myself, used to do the same thing. I still occasionally eat a hunk while prepping. My husband grew up nipping whole raw potatoes while his mom prepped them. We're all still alive and kicking. As far as I know.0

Corn isn't a vegetable and neither are potatoes.
Both are starches. Corn is a grain and potatoes are tubers.
Neither one should be eaten raw
Any edible part of a plant that is not a fruit (enlarged ovary) is a vegetable.

Pretty sure you can eat corn raw, as well. Just want to make sure it's ripe - people in the midwest do it all the time when sweet corn is in season.
From a practical perspective, it wouldn't be easy to eat sweet potato, pumpkin, and turnip raw. Just too hard - you'll lose a tooth.
For everything, though, be sure you wash it well!0 -

Could anyone tell me what veggies are safe to eat raw?
I've read so many different things now, and it's getting confusing. One minute i'm reading raw spinach is ok to eat...then i'm reading it's full of harmful toxins and shouldn't be eaten raw! And it's like that with every vegetable!
I'd really appreciate any help/advice.

If someone told you raw spinach is 'full of toxins', they're nuts (or uninformed). IF they're talking about pesticides and other chemicals that might be sitting on the leaves themselves, that's a different story. You should always wash all fruits and vegetables thoroughly before you eat them. A 'top 10' list just came out of vegetables that are more likely to have toxic chemicals on them:

I prefer all of my veggies raw, to me they taste so much better and you don't lose any nutrients from the cooking process. There are many diets and forums out there you can google on raw food diets, veggetables especially, with smoked fish and other foods. It is so much better for you than cooked or processed foods.

also- I agree with the quoted individual above, you get much more out of the veggies if you dont boil them down to mush.
Also, I believe eggplant is the only one you shouldnt just scarf down. You can eat a little bit of raw potato, but i dont recommend eating more than a large one, total.
I grew up in an Irish household - there was one recipe for veetables:
1. Put previously frozen vegetable <X> into a pot of boiling water
2. Check meticulously once every hour until all color has transferred from the vegetable to the water
3. Strain and serve
So, these days, I really can only eat raw vegetables. If you try to even blanch my carrots, you risk me heaving all over the place. (The body remembers...)0 -
depends on what country you live in. in the US, it doesn't matter, you're fine. in some developing countries, you run the risk of parasites or whatever disease-causing bacteria is present in produce grown with raw sewage irrigation (read: human waste used as fertilizer). and apparently you shouldn't eat raw cabbage in high-altitude countries like peru or chile, a friend of mine learned that one the hard way :sick:0
