How to track marinades

...so I'm about to marinade this chicken breast in soyaki sauce.. I'm not going to be consuming all of the marinade, and a good portion of it that is absorbed into the meat will 'cook out' once I put it on my Griddler.. so I'm wondering if anyone has any tips on how to track it? I'm not certain how much of it will still be left in the chicken..so I'm lost.. Any ideas?
