low calorie, multiple portions and freezable

Hi everyone
I live a busy life (don't we all) and have fallen in love with making a big batch of something on the weekend and then freezing individual portions of it for the next few weeks. I've done chili, cook yourself thin's stuffed shells and a low calorie version of lasagna (lots of mushrooms, spinach, chicken sausage with all the grease removed and skim ricotta cheese cut into 12 portions). I'm running low on my stock of all these things and need to come up with some other options to add to the freezer. Anyone have any suggestions? I do also try to make these things so that my boyfriend will like them (ie tasty) since we tend to have them for dinner before I freeze them. I love making a low calorie version of shepard's pie, but I don't think that will freeze well.

Try recipezaar.com they have great recipes. Here's one I like:
Campbells Cheesy Chicken & Rice Casserole
Ingredients
1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup
1 1/3 cups water
3/4 cup uncooked long-grain white rice
2 cups frozen mixed vegetables
1/2 teaspoon onion powder
4 boneless skinless chicken breast halves
1/2 cup shredded cheddar cheese
Directions
1 Stir the soup, water, rice, vegetables and onion powder in a 12" x 8" shallow baking dish.
2 Top with chicken. Season chicken as desired. Cover. (I used chicken tenders and seasoned them with a little season salt, pepper, & garlic salt)
3 Bake at 375 degrees for 45 minute or until done. Top with cheese.
4 Serve with a green salad and bread of your choice.
If you use low fat or fat free soup and low fat or fat free cheese and use brown rice it can be really low calorie.

I take those no cook lasagna sheets and layer with hunt's canned tomato sauce, low fat mozzarella and skim ricotta with basil and oregano mixed in. Between the layers I put in sauteed spinach and mushrooms with a tiny bit of shallot and cooked chicken sausage. The chicken sausage was 150 cal a link and I used 5 links. I also drained off a TON of fat before putting it in the lasagna after cooking it.
total ingredients:
2 cans of tomato sauce
2 cups of reduced fat mozzarella
1 small container of skim ricotta
1 package of no cook lasagna sheets
1 bag of spinach
about 10 mushrooms
5 links chicken sausage
season the ricotta with italian herbs to taste
I then layered and baked using the directions on the pasta box as a guide. Cut into 12 pieces and it was about 330 calories a slice when I put it all into sparkrecipe, although I bet it was less because of all the fat from the sausage that I drained off.0 -
