Serves 12

Ingredients:
• 7g Stevia
• 1 jar baby food applesauce (120g) or greek yogurt (but add sweetner)
• 1 tsp ground cinnamon
• 1/8 tsp nutmeg
• ½ tsp all spice
• 1/2 tsp. baking powder
• 1 tsp. baking soda
• ¼ tsp. salt
• 1 tsp. vanilla extract
• 4 egg whites
• 1 can of raw pumpkin
• 100g oat flour / soya flour
• 60g vanilla whey protein
• 1/4 cup milk
• 35g chopped walnuts (optional)


• Preheat the oven to 180
• Use shallow pan (like a tart pie).
• Combine first 11 ingredients and mix well.
• Add the final 4 ingredients and mix until incorporated. Spread batter into the pan and bake for 30 min.

    My favorite food EVER --

    1 can pure pumpkin
    1 cup egg whites
    2 tablespoons splenda
    cinnamon
    pumpkin pie spice

    Mix together above ingredients in a bowl and then portion into 4 tupperware containers. When ready to eat, sprinkle in a bit of baking soda (and some mini chocolate chips if you'd like), mix, and then put in the microwave for 2.5 minutes. When it comes out, crush a graham cracker overtop, drizzle some Walden Farms caramel syrup, 2 tablespoons Fat Free Cool Whip, and a final dash of pumpkin pie spice. 140 calories (without the chocolate chips) and soooooooooo filling and yummmmyyyy.
    I literally eat this everyday. I'm a huge pumpkin pie fan and this totally satiates my sweet tooth!
