Fat free, no added sugar Bake 2 - bread pudding

500g bread, broken up into small pieces (I used walnut bread)
275g dried fruit (I used mixed fruit)
100g sunflower seed hearts
2 large eggs, beaten
1.5 tbsp mixed spice
600ml milk (I used almond milk)
6 tsp demerera sugar (optional)

Serves 16
Fan Oven 160 degrees C

Put all the ingredients in a large ball and squish together with your hands. Leave for 15 mins to soak. Sprinkle sugar on top if you want a crispy crust.

Grease a 9 inch loose bottomed cake tin and bake for 1.5 hours.

Let to cool for 30 mins before removing.

That's it! Play around with the fruit/ seed ratios and bread types as you wish. Makes a good breakfast bake as keeps well.

220 kcal, 28 carbs, 9 fat, 9 protein, 2 fiber. Fat is from the seeds not added fat.
