Egg Stuffed Potatoes

I just shared a pic of this in my FB weight loss group (although it's not one of my typical low-cal recipes). My husband's been laid off, so we've been trying to eat super cheap the last couple of weeks, and I stumbled upon a recipe for an egg cooked inside a potato with ham and cheese... :love:

This is SUPER cheap, so I had to share here...they were "amazing" as my hubby said. :blushing: I don't like yolks, but I was willing to try them runny....but I think next time I'm just going to put two egg whites in mine!

The cal count for the whole potato and 6 potato drops was 714, but I only ate part, and it ended up being 476, which isn't awful. I know it's not a GREAT meal, :ohwell: but when you want a baked potato, why not make it a meal with some extra protein? :flowerforyou:

    That would be good too....hubby just doesn't like them.

    It looks great! and actually, with a green salad as a side, it would make an ok meal.
