This is a very nutritive muffin. 86 calories, 3g protein, 3g fiber... lots of fruit and vegetables, but tastes like a hearty treat! Nothing bad, the best whole grain stuff, nothing for no reason... Super low fat!

If you want to fiddle with the sugar or calories, the easiest thing to remove without affecting the recipe is the raisins. If it's not sweet enough for you, try grinding up the raisins to distribute them, or replacing them with agave or your natural sweetener of choice. I have the best luck with the raisins by throwing them in the blender with some of the dry ingredients, to prevent them from becoming a sticky mess that's hard to blend in.

The inulin can be hard to find. You can skip it, but I like it... a little sweetness, lots of fiber, low calories and no carbs. Sometimes you can find the regular in Whole Foods, but I get the Vanilla on Amazon.com.

Serves 16

Mix everything. Put it into muffin cups sprayed with pam. Bake until fully cooked (until a toothpick inserted all the way straight in and straight out, comes out clean) - about 10-15 minutes. They're moist and fabulous... and I think they count as eating vegetables! :)
