Egg suggestions?

As a child I used to love eggs, quiche, etc but I would always get sick after eating them- this was also true for custards, puddings and other egg-y dishes but not from meringues - so I figured it must have been something with the yolks

now, even as an adult, the mere smell of eggs cooking makes me queasy - but of course that is purely psychosomatic

since I think I have probably out grown my actual physical problem with eggs (I have eaten a few suspicously eggy things without vomitting) I want to try eggs again since they are a great source of protein with low calories, so does anyone have any recipe suggestions to sneak egg whites into my diet? I want to start small and if it works will consider things like egg white omelets later

    Lots of times I made scrambles with more veggies than egg. I do about 1 1/2cup-2cups veggies per 2 or 3 eggs. I typically do strongish tasting veggies like mushrooms, broccoli, peppers, green beans..whatever really..and top it with salsa, sriracha and/or sour cream. Its surprising how un-eggy it can taste with all those veggies

    Fried rice....egg whites or the whole egg. veggies all stir fried up, scramble and cook the egg, toss with veg and add the rice and seasonings.
  • Egg muffins...Makes 12 regular size muffins. I make these on Sunday and refrigerate for the week.

    5- Egg whites
    5oz Spinach
    5oz Broccoli
    Onion-wole
    3 cups-Cheese (your choice but I use skim mozarella or goat and parmesan mix)
    1/4 C- Plain greek yogurt

    Mix egg whites, cheese, and greek yogurt in a bowl.
    Cook onion, spinach and broccoli in 1 tbs olive oil until tender and combine with egg mixture.
    Spray muffin tin with Pam. Fill each muffin 3/4 full. Cook at 350 for approximately 30 mins. Cool for 10 mins and enjoy. I think the recipe stated 100 cals for 2 muffins.

    gf pancakes: 2 eggs and a small mashed banana. fry them like pancakes and eat with honey or syrup.
    OR, just put 2-4 eggs in your regular pancake mix and reduce the liquid a tiny bit if it doesn't already call for eggs.
