Need menu/food ideas for camping

I'm going camping this weekend and was wondering what menu ideas would be good to take along or to cook while camping. I want to eat as healthy as I can without overloading on typical hotdogs over a campfire. Any suggestions on what can be prepared at a campsite? If we had a trailer that would be different; I would have the use of a fridge for cold storage. But we are in tents and will have a bbq as our main source of coooking. Kabobs perhaps?

    Last time I went camping we took some tin foil, filled it with vegetables (squash, corn, peppers, onions, etc), wrapped them up and just stuck them in the fire. Not sure if you're into fishing but you can roast fresh-caught fish like this too.

    Awesome idea! We love to go perch fishing and never once did I think to cook them in foil.

    Grilled fruit (especially pineapple, peaches, apricots).

    Will you have a cooler at all? If so I have a lot more ideas.

    take a whole wheat pita, cut it open along the edge (about 80% of the edge) spread your sauce on both sides of the inside, then stuff it with low fat cheese, veggies, and lean meat toppings. then you can either use a roasting cage (smore makers or veggie roasters work well) to cook it over the fire, or you can put it on a grill. or wrap it in foil and put it on not to hot coals.
    (i like using a roasting cage best, as you can keep an eye on it)

    campfire dinners
    -take a slice of tin foil, put a little olive oil on it
    -sprinkle some random spices
    -add thinly sliced potatoes, random veggies, precooked meat of somesort.
    -wrap it up so it's seals
    -put on your grill or on the coals.

    for snacks, it sounds silly, but instead of roasting marshmallows, my sisters and i will roast pieces of peppers and zuchini.


    corn on the cob is great on the fire to. sometimes we soak them in water first, sometimes we don't. just throw them on the coals and turn them every once and a while. should be coaked in about 15-20 minutes, depending on your coals.

    These are some great ideas for the camping season. Camp fire pizza... I will definitely have to try that one.
