Heavy Cream...Embrace the Goodness
So I bought a container of heavy cream this week to pursue some new low carb recipes. Here's what I tried:
Crustless Quiche Muffins
6 large eggs
3/4 cup heavy cream
chopped onions, peppers, broccoli
1 clove garlic, mashed
4 pieces of bacon, pan fried, patted dry, and broken in small pieces
ground pepper & sea salt to taste
Shredded gruyere to top
Preheat the oven to 375. Beat eggs until smooth, mix in cream, then vegetables/bacon/seasoning. Pour into muffin pan. Bake for about 25 minutes. In the last 3-5 minutes, top with gruyere then bake until crispy. The sides should be browned a bit.
Carrot and broccoli mash
1 pound carrots, cleaned and chopped
1 large broccoli crown, chopped
1-2 tbsp butter
1/4 c. heavy cream
garlic (optional)
Boil carrots. Steam broccoli in a separate pan. Once carrots are soft, toss in a food processor until smooth. Return them to the pan, mix in butter and cream. Drain broccoli, place in food processor - a finely chopped consistency is good. Add broccoli to carrot / cream mixture, stir well. Season with pepper and salt and garlic powder (if desired).
