single serving recipes?

Hi, my family usually eats unhealthy foods and I usually stick with chicken breast and some salad but I've been wanting to change it up for a while now so I've been looking at new recipes. The problem is, they are all recipes serving 4-8 and 1/8 tbs gets difficult to work with. Does anyone know any websites, such as skinnytaste, that offer recipes for the lonely,yet healthy, people?

    My family won't eat my healthy food either so i've been having to cook for one for a while now. The easiest solution I have found is to cut the portions down to a manageable size (i.e. 4) and then freeze or store the other three portions for later, that way all of my ingredients get used before they go off and I can take it easy a few nights a week and reheat something I've previously made. This isn't ideal as I don't have a lot of fridge/freezer space, but usually enough to free a few meals!

    I've the same problem. Hubby can eat just about everything. Me, I have about 60 pounds to lose, and high blood pressure to boot.
