fridge pickled veggies (squash based)

I love pickled veggies, but they are too high in sodium and sugar. Not so if you make your own!
Sometimes I add green tomatoes or any other firm veggie I feel like.
I like to use, all thinly sliced:
zucchini or yellow squash 450 grams
red pepper 100 grams
onion 100 grams
mix with 1 teaspoon salt, let sit for an hour
stir then squeeze out all the water and pat dry with a towel
add 1 teaspoon each celery seed and mustard seed, or use pickling spice
add 1/2 cup apple cider vinegar
add 1/4 teaspoon powdered stevia
mix well and put in fridge in tigthly sealed container. I like to give it a good shake every time I open
the fridge for a drink etc. Ready in 24 hours, keeps for a week.
