Beans might really be the "Magical Fruit"

Minus cheating a little yesterday... It was a holiday after all... Holidays are special right :) I've been eating so healthy for the last couple of weeks... I'm not sure how many pounds I've lost... I've sworn off the scale again until I get down to a certain dress size, but I know my clothes are fitting much better than they were just 2 weeks ago.

I've been eating tons of beans, especially Lima beans, my portions are actually pretty small but with all the fiber in them I stay full, I soak and cook them from dry beans so they are very cheap and have no fat or sodium and have a ton of potassium, they dont' seem to have much of a taste to me so are really easy to add to veggies with just a little goat cheese for flavor.

I'm not really hungry and am very... um... regular.

Anyone have any great bean recipes for this new bean enthusiast?

    Since I became vegetarian, I started eating more beans. I love chickpeas - soooo delicious! Spicing them up and just baking them is great, but you can do sooo many things with them!!!
    Romano beans go great in rice and also in vegetable soups.
    Black beans go great in tacos.

    We have a HUGE bag of chickpeas, cost us like $9, it will last us at least a month, maybe two, and we eat them quite often.

    I'll have to try Lima beans. I'm on a Gluten Free diet, so i'm not getting enough fibre. Thanks for the post. :)

    I always thought beans were the MUSICAL fruit....

    Lol that would make more sense... I swear I had always heard it as 'magical' though... but then again my family has not always been know for getting song lyrics right either :smile:

    I try to eat beans every day. I soak a bunch ahead of time and bag them in serving sizes. I use them mostly to satisfy my daily iron, but also to contribute to my daily protein. I use kidney beans, soya beans and navy beans mostly. I rotate them weekly or so and mix them up as much as I can. So glad I found them :)

    I've never heard of Romano beans... what do they look like? I'll have to try them... I already love Chickpeas and black beans :)
