Spaghetti Squash Summer Salad
Decided to buy a spaghetti squash. Initially I was going to use it instead of pasta when I made spaghetti, but I didn't get the chance to...and instead I made a yummy salad!!!
First, I cut the squash in half, scooped out seeds and placed the halves flat side down into a baking pan with a little bit of water. I baked this at 350 for 50 minutes. I let it cool a bit and then started scraping the insides out, which turned into spaghetti strands, and placed them into a bowl to cool even longer.
Next, I added some fresh veggies. I used carrots, cucumbers, green peppers, and grape tomatoes.
Last, but not least, I added feta cheese and italian dressing. Refrigerate and serve cold.
Delicious and EASY!!!!!
