You can slice it and fry it in non-stick cooking spray or bake it. I like it with tomato sauce or just plain with salt and pepper.

I love polenta and its really best made from scratch if you can and super simple. This is my go-to recipe:

    2 c 2 % milk
    2 c chicken stock
    2 c yellow cornmeal/polenta
    1 c parmesan cheese

    1. In a large pot combine the milk & chicken stock. Bring to a boil over medium-high heat. When its at a rolling boil, slowly whisk in cornmeal, making sure there are no lumps. Reduce heat to low and simmer until thick, about 5 minutes. Remove from heat and stir in parmesan cheese. Stats are: Serves 6 at 186 calories, 23 carbs, 6 fat, 30 protein.

    So. Good!

I also will sometimes top with spaghetti sauce (canned or homemade) and bake in a glass baking dish at 350 for 10 minutes till the sauce is bubbly on top. Stats with tomato sauce (used Ragu Old World Traditional as a basic choice): 233 calories, 30 carbs, 7 fat, 12 protein.

I just plugged in the recipe as written without tweaking (reduced fat cheese in place of full fat, ect) so you can tweak with lower fat cheese & milk and it will come out with lower stats as well.

I love a slice (or several) of polenta with pesto and some parmeasan cheese as a snack. Pop it in the oven for a bit to warm it up and melt the cheese... yummy!
