It's hard! I start counting my meals for the day when I get up. (Around 3pm) I work 3rd shift (11 PM - 7 am) I usually have my biggest meal around 7 pm. snack around 1 am. eat another meal around 3 am. snack again at 5 am and try not to eat anything when I get home. It's strange but it works for me. My eating pattern starts in the evening around 7 pm and ends the next day at 7 am. Hope this helps.

I used to do night shifts and I just had a meal every 2 hours, roughly sticking to how I would eat during the day.

    So:
When you wake up: breakfast-type meal
    Two hours later: small snack
    Two hours later: lunch-type meal
    Two hours later: small snack
    Two hours later: dinner-type meal
    Two hours later: small snack.

And then it is just a matter of adjusting that to your breaks or times that you can eat a bit while working.

I work from midnight to eight in the morning. This is how I calculate things.

-I start every "day" from midnight. So, if I eat anything at work, I count it as a snack.
    -Breakfast at 8:30 am.
    -Sleep
    -Lunch at around 4p,
    -Dinner at around 9pm.

This may not work for anyone else but it's been working for me.

Set an eating schedule. If you work in an area where you don't have time to eat "when it's time to eat", keep meal replacement bars with you.
