I don't know for certain, but what kind of oatmeal are you using?
Steel cut oats have the best texture in my opinion.
If you are trying to make oatmeal with those steamed and flattened oats then it would get mushy if you are cooking them for longer.0 -

I really like McCann's old fashioned steel cut oats, I cook it according to the package, it comes out nice every time. They are chewy texture, not sure if that's what you're going for. As long as you don't overcook them they shouldn't be mushy.
You can also make overnight oats with the steel cut-- bring the water to a boil on the stove, add the oats and stir, then cover it and turn the heat off. They'll be cooked in the morning and they reheat quickly.0 -
Yea thats what I want I slow cook them over night on low and not to found of them but I will try leaving them over night0
