Vegan sei-tan tacos w/ grilled plantains

here are our sei-tan tacos:

with grilled plantains (i like trader joe's spinach wraps instead of corn tortillas):

Plantains are ripe when they look like over-ripe bananas. We like to grill them in the grill-pan and sear the *kitten* out of 'em:

For the tacos we used corn tortillas, poblano peppers, sweet red peppers and onions (added chili powder and cumin) done fajita-style, shredded sei-tan, vegan nacho cheese, sliced avocado, and a bean dip for the plantains (bean dip was just garlic, tomato, cumin, black beans and a wee bit of silken tofu in a food processor or blender - if you don't hate cilantro like i do you should add it).

My husband also had rice cooked w/ tomato puree instead of water for extra flavor.
