Winter chili
3 onions
1 tbsp canola oil
5 oz portobello mushrooms
1 lb, 1 oz extra lean ground chicken
1 can low-sodium diced tomatoes
20 baby carrots (pured, cooked with tomatoes)
12 oz - cubed butternut squash
10 celery talks (1/2 pured, 1/2 diced)
2 cups navy beans (can be substituted)
8 oz water
seasonings, salt, pepper to taste
Sautee onions (garlic optional) with salt, canola oil, seasonings. Add diced mushrooms.
Add ground chicken and cook. Add canned tomatoes. Add all of the other ingredients and cook until squash is tender. Around 60 mins.
Add extra seasonings to taste
Number of Servings: 10 <---- I got this # because I took a 1 cup measurer and got 10 portions out of my batch. Not bad.
