coming home today from vacation. my oldest will only be home a few hours before they head off to camp. her request was ham and potato soup. well the one i use to make not so healthy.
so i need a healthy one with great flavor.

i make mine a little different now as i like to eat it also: i put the cubed ham ( in my case i use the little smokeys lite bc my kids like it better) in the microave for 2-3 min( or in the oven so they get a little crispy and lose some of the fat). then in a pot i put the cooked ham and i cover with water. i add a tsp of paprica, stir and i let it boil for a few min, i clean the potatoes, i cut in bite sizes and i add to the pot. i mix add spices and cover with just enough water for the potatoes to be covered. as apices i like to use some chicken bouillon (5 cal each), black pepper. i let it boil so the potatoes are cooked thru and i add 1% or 2% warm milk to the top of the pot. i stir taste for salt ( a lot of times its not needed to add salt bc the chicken bouillon has enough) bring it to a boil and turn off the stove. my familly enjoys this soup a lot. i do not use oil or butter at all and they dont see the difference lol. i hope u enjoy it
ps: i forgot to say that not a lot of milk is needed. maybe a couple of cups. i use it for the collor mostly. the soup gets that white/ red collor.0
