How do you keep celery from turning brown?

I cleaned and cut up a thing of celery on Friday, put it in a zip lock bag with a couple clean dry paper towels. Yesterday (Sunday) I went to grab some for a snack and every piece (4 inch pieces) had turned a dirty blond brown color. It wasn't mushy, just brown and very unappealing. I pitched it. How can I keep this from happening? What did I do to cause this? I have never had this happen before. TIA

Instead of the baggie you might want to get some produce storage containers. Rubbermaid makes some called Produce Savers that work really well. They are specially made to lengthen the life of produce.

Don't use a metal knife on the celery. The metal reacts with the food causing it to brown quickly (you can see this on other fruits and veggies like apples and iceberg lettuce). Either use a porcelain or plastic knife for advanced food prep or just hand separate the stalks and slice when you are ready to eat the celery.
