Ginger Lime Peanut Slaw

8 cups shredded green cabbage
1 to 2 green or red bell peppers, chopped
1/2 to 1 sweet onion, chopped (optional)

Dressing:
1 clove garlic (or 1 tsp garlic powder)
¾ cup crunchy peanut butter
¼ cup red wine vinegar
3 tbsp packed brown sugar
1 to 2 tbsp soy sauce
1 to 2 tbsp freshly squeezed lime juice
1 tbsp grated gingerroot (or 1 tsp ground ginger)
1 tsp sesame oil
1 to 2 tbsp water

1. In a large bowl, combine cabbage, green peppers and onion.
2. Prepare the dressing: in a blender, on high speed, blend garlic, peanut butter, vinegar, brown sugar, soy sauce, lime juice, ginger and sesame oil (if using) until smooth, adding water if necessary to thin dressing.
3. Pour dressing over salad and toss to coat. Cover and refrigerate for 1 hour to allow flavours to meld.

*You can also just mix the dressing by hand and pre-mince the garlic and ginger…*
