Dry Rub Baked Chicken

Take one breast of chicken (what we call one, which is actually a half) and put in a ziploc bag with water, 1/4 cup vinegar, a tablespoon of brown sugar, and then whatever other seasonings you like. I used salt, pepper, and chili powder - I think it needs some spice with the sugar. Let it chill between 1 hour and 3 hours. Don't do it anymore. This is brining and any more time will start breaking down the chicken.

Take the chicken out and dry with paper towels. Mix 2 tablespoons of brown sugar, salt, pepper, chili powder, and garlic in a bowl. Cover one side of this chicken with this rub mixture. You're going to bake it in the oven for 45 minutes. Preferably, bake in a pan with a rake inside so it's not touching the bottom. Put some of the marinade liquid to keep the chicken a little wet.

45 minutes later you got one moist tasty piece of chicken! I live alone so obviously quadruple this recipe as necessary. The brine technique really gives you good tasting chicken
