Wanted: Need a GREAT Oatmeal Cookie or Bar Snack!

Greetings Fellow Travelers! I am in search of a Great or Wonderful or Both recipe using old fasion rolled oats for cookies or bars. I am diabetic, so it will have to use Splenda or Stevia. I am looking for a low cal, low fat, nutricious, yummy treat for the sweet tooth that is at least 'good' for me. Whatchagot? ;-)

i make these for my family, they are super good and batch freeze really well! tweak as needed (brown sugar splenda, sub half butter/half canned pumpkin or applesauce). they are seriously yummy.
Breakfast Bars
3/4 C packed brown sugar
1/2 C butter or margarine
1 egg
1 t vanilla
1 2/3 C flour
1/2 C ground flax seed
2 1/2 t pumpkin pie spice
1/2 t baking soda
1/2 t salt
2 C quick or rolled dry oats
5 large bananas, mashed
1/2 C raisins (if desired)
Cream butter/margarine, brown sugar and vanilla. Add egg and mashed bananas, combine well. Add remaining dry ingredients (except oats) and mix completely. Fold in the oats and raisins last. Drop by large spoonful onto greased cookie sheets and bake in a 350 degree oven for 15-20 minutes. Bottoms will be browned well when finished. Cool completely and store covered. Add some peanut butter on top for extra protein if desired.
This is another recipe I just found, haven't tried it yet but they look yummy. the recipe is from chiquita banana's website, they have several others that are oat based.

I just made these and LOVE them!!
Peanut Butter Banana Oatmeal Squares
Printable Recipe
1 1/2 cups quick cooking oats
1/4 cup packed light brown sugar
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup milk
1 large egg, lightly beaten
1 large mashed banana
1/4 cup creamy peanut butter
Mix together the quick cooking oats, light brown sugar, baking powder, kosher salt and ground cinnamon.
Add in the vanilla extract, milk and egg. Mix the ingredients together.
Then add in the mashed banana and peanut butter. Combine all of the ingredients.
Pour the mixture into a lightly greased 8 by 8 inch metal baking pan. Bake at 350 F degrees for 20 minutes.
Cut into squares and enjoy!
I square is about 160 cals.0 -
