Butternut Soup with Bacon Bits

Hey guys,

I have to share this recipe :) It is ABSOLUTELY AMAZING! Def one of my more brilliant moments in the Kitchen
Good Morning Everyone,

Ingredients
• 1.3kg Butternut (chopped & peeled weight)
• 500g potato (chopped & peeled weight)
• 1whole garlic (medium) this can be adjusted to taste too.
• 200g bacon bits (I cut excess fat off)
• 1 – 2litre chicken stock (depending on how thick you want the soup, see recipe for details.)
• 1 medium onion peeled & diced
• 3Tbs Olive oil (optional, makes for better roasting)
• ½ tsp. Salt
• ¼ tsp. cayenne pepper
Method
1. Boil the butternut chunks until they are soft, drain the water into a bowl.
2. Roast butternut pieces with drizzled olive oil and garlic in the oven at 200 degrees, till nicely roasted
3. In a pot on the stove use the water from butternut and add chicken stock powder diced onion, salt , potato chunks and allow to cook soft on a low heat while butternut and garlic are roasting.
4. In a separate pan fry bacon, and a table spoon of the bacon to the potato and stock cooking on the stove top and set the rest aside.
5. When Butternut/garlic is roasted and ready add to the potato/stock on stove top, blend with a stick blender till smooth.
6. Add bacon bits, cayenne pepper and allow to simmer on a very low heat till ready to serve.

I serve mine with fresh bread/ rolls and extra cayenne pepper on top, I am sure you can add some cream / crème fraiche or something of the sort before you serve if you want to make it creamier.( but that wwill push the cal up majorly!)just the way it is and as it is with all soups it is better the next day.
