    I leave out the ricotta cheese and don't scoop out the inside of the zucchinis. Nice and gooey.

    Grilled zucchini *mmhhhh*

    Slice zucchini in slices lengthwise, spray both side with nonstick cooking spray or brush with olive oil. Season with salt, pepper and garlic powder. Throw on the grill till soft and slightly browned. (works also well with eggplant)

    Roasted zucchini

    Cut zucchini in cubes. Put cubes in a ziplock back and add olive oil, pepper, garlic powder and italian herbs (salt after it is baked). Spread on a greased baking sheet. Put in the oven at about 400°F for about 20 min till soft and brown. (also great with eggplant)

    In the summer I like to slice them the long way brush with olive oil and sald and grill them. Otherwise I slice them into half moons and saute them with other veggies. I used to make a zucchini parmesan, replacing eggplant with zucchini. That was so good, but def not healthy! Oh, another thing I did recently was slice them into rounds, dip into egg, and then breadcrumb and bake in a 425 oven until crispy. I baked them on a cooking rack on top of a cookie sheet so they didn't stick to the pan and cooked evenly. You can alternatively saute them in a little olive oil. I also grate it and add it to meatloaf sometimes. Yesterday at a restaurant I ate a salad that contained spaghetti like strands of raw zucchini it it and it was really good. I have to figure out how to cut it like that. Zucchini is very versatile!

    Raw recipe - "zucchini carpcaccio"
    slice zucchini as thin as possible (easiest if you have a slicer or mandolin), like, paper thin
    drizzle with olive oil
    sprinkle generously with chopped fresh mint
    salt and pepper to taste
    sprinkle on some dry toasted pine nuts or pepitas

    Sautee for 20 minutes (with a small spray of nonstick cooking spray) and serve with 1oz feta for every 4 or 5 oz of zucchini
