Never eat the amount of calories I should daily.

I have found quite difficult to eat the amount of calories I'm supposed to. I always end up lacking huge amounts. It probably doesn't help that I usually don't eat lunch because I always wake up around noon now during Summer. So does anyone know any tricks or easy to make foods that can compensate?

    What you want to look for are calorie dense foods that are still good for you like avocado, nuts & nut butters, olive oil, full-fat dairy, flaxseed, etc.
