182 cal vegan blueberry ice cream (very purple!)

Just made this recipe from my Honestly Healthy recipe book (I've you've not seen the book, get it, it's amazing! All veggie)

Can't wait to try it once it's frozen. Took about 5 minutes to make (plus freezing time of course)

100g raw cashew nuts
180g frozen blueberries
80 ml water
2 tbsp agave syrup


whizz all the ingredients in a blender until smooth, then freeze in an ice cream maker, or transfer to a freezer proof dish, cover and freeze in the freezer.

If doing it in the freezer, when it starts to harden around the edges, whisk vigorously with a fork to break up the ice crystals, then freeze until firm.

And the bonus is it looks soooo pretty and I think it will make your tongue purple too!!:laugh:

    PS, says it serves 4 (the cals above are if you make it and serve it to 4 people) Though that doesn't make enough for me I think lol!

    Yum!

    I wonder if you could cut the cals by using less agave? Like 1 tbsp instead?

    Yeah prob! Though maybe the cals come from the nuts? I'll let you know how sweet it is. Better go check if it's time to stir! Hope it'll be ready soon, its almost dinner time here :)
