I follow a lot of recipe blogs and stuff, but the recipes always seem slanted for families. I'm just tired of trying to figure out the adjustments.

I'm not sure if you've tried this one or not but there are several single serving recipes on www.hungry-girl.com. I've tried a few things off there and they're pretty tasty. I hope this helps!

Oh, and another thing that works if you don't want to scale! Pick up a set of 2 cup glass bakeware containers. They're usually $8-9 at a Wal-mart type store for a pack of 3 with plastic lids. That way you can divide up the recipe and freeze the extras for a quick dinner later on. Great for baking (without the lids of course) then just let them cool, lid it and freeze it.

If you go to allrecipes.com, it allows you to change the number of servings when you go to the recipe page. Once you put in 1 serving instead of 10, the ingredient amounts automatically change to reflect the changes you made to the serving size. I've used it a lot to make fewer servings than the recipe called for.
