Any quick light meals for supper?

We tend to have our biggest meal for lunch (dinner in some places). Since my husbands works evenings it just works out that way.
So I need ideas for supper that is quick and light. It's usually just my son and I eating since hubby is at work and my daughter is only 10 months.

Depending on what your son likes to eat. some thing is really quick and easy is a salad FULL of all the veggies you love topped with sauteed shrimp. It is very light and very yummy.
Generally, I sauteed my shrimp in 1 tbsp olive oil, fresh garlic, lemon juice and just a little white wine with fresh herbs (oregano, basil added)....if you make extra "sauce it is also great to put over a pasta of some type with spinach or broccoli. I generally eat Barilla Plus because it has added protein and a little less carbs. Shirmp taks no time to make so it should take less than 30 minutes to make and is light and delish!

I had a super yummy light meal last night. Spaghetti squash, some browned 96/4 ground beef, and a 1/2c organic low sugar tomato sauce. It was DELISH! And you can eat a ton of spaghetti squash with no guilt
Of course, this might not appeal to your son! My son will eat it, but my daughter won't.0 -
My favourites are ryvita with extra light cream cheese and a bowl of veggie soup;
Small pan-fried salmon fillet with some oven-roated/boiled/steamed veggies0 -
We call our giant salads "monster salad" which may appeal to kids. My guy's (same palate as a child) fave is sweet potato burritos which make a ton and I wrap them in a paper towel and toss into a sandwich bag to keep in the freezer and pull out as needed. They heat in the microwave well and your hubby could take for his supper at work. Recipe below (I use black beans instead of kidney)

Homemade hearty soups are good too. I make a mild White Bean Chili and Vegetable Corn Chowder which are easy and freeze well.
"Fiesta Casserole" works too (layer ripped up pieces of corn tortilla, refried beans, sauteed onion fake beef and rotel, then top with a little cheese and salsa)
All are easy as I am not a great cook and work well for substituting to lower cals and use what happens to be in the kitchen.0 -
I like jacket potatoes with 0% fat cream cheese instead of butter and then 1/2 portion of leftover curry/chilli/casserole or whatever we had for lunch the previous day. With extra veg or salad on the side.
Soup is another good one.
Open sandwiches - take away one slice of bread and serve with salad.
Stuff on toast - cheese, baked beans, poached egg with salad.
Salads with cold pasta or couscous or quinoa.
Falafels or spiced meat patties with salad and pitta.
Oatcakes or crackers with pb & banana or cheese and chutney and a fruit smoothie on the side.0 -
I'm in the same boat -- dinner is usually the biggest meal but often times my husband works late. If it's just my toddler and I, I have no desire to cook a big fancy meal. I would love to see some suggestions!0

why not just switch your meals? There's no rules that say you have to eat certain things at different meals. If you're already making a large meal ("dinner sized") for lunchtime then make a "lunch-sized" meal for supper. Salads and sandwiches are great and quick and will leave you more time to play with the kiddos while daddy's away lol0

I love making mini/personal pizzas with low carb tortillas and various toppings.
For Buffalo chicken pizza I use chicken cooked on my george forman, shredded and tossed in hot sauce (you can make this ahead of time to save time later). Then use some light ranch or tomato sauce mixed with hot sauce as the base. add the chicken, onions, and cheese. Top with some light ranch if you didn't use that as the base. Maybe add a little more hot sauce. Bake in the toaster oven until done.
I've also done goat cheese, onions, tomatoes green pepper, and spinach.
Regular pizza toppings would work too.
Calories seem to work out to about 300 max for any variation.0 -
