Pumpkin Softies

I call these "softies" instead of cookies (borrowed the term from HG :wink: ) because they have almost no sugar in them and are not as sweet as a regular cookie- which is why I like them!

Kelynn's Pumpkin Softies:

1 cup oats
1.5 cup whole wheat flour
1 tsp baking soda
1 tsp ground cinnamon
.25 tsp ground nutmeg
2/3 cup egg beaters
1 tsp light brown sugar
1 cup canned pumpkin
1/2 cup skim milk
1/8 cup (2 tbsp) mini chocolate chips

You could mix in whatever you like either in addition to, or instead of the chocolate chips- walnuts, etc. I also put a tsp (5 calories) of fat free cream cheese on them right before I eat one and that's good too! :tongue:

Bake on a sprayed cookie sheet at 350 for about 13-15 minutes- or until the cookies are starting to turn golden brown.

If you make them according to my recipe, and get 24 cookies out of the recipe, this is the nutrition information (per cookie):
52 calories :wink:
12 carbs
1 g fat
3 g protein
69 mg sodium
