Looking for some meals to make

Hello I am new here. I have a fiance and a 2 year old daughter. IM looking for some meals for lunch and dinner I can make for my whole family. And maybe some healthy snacks for me throughout the day. I look forward to making friends on here. Please help! Thanks Kattie

    We make a lot of stir fry, we have burgers (I have a turkey burger), etc.

    Basically, I eat what we normally eat, but I bulk it out with veggies and eat smaller portions of everything else. :)

    For snacks, string cheese, fruit, yogurt, nuts, apple slices w/natural peanutbutter, the occasional Skinny Cow truffle bar.:wink::laugh:

    One of my favorite meals that is low in calories are chicken enchiladas in the crock pot. I combine 3 boneless skinless chicken breasts (raw), 1 cup of frozen corn, I can of black beans and 1 16 oz can of salsa in the crockpot. I cook this on high for 4-5 hours. I then shred the meat and add the mixture into low fat or whole wheat tortillas and add them to a casserole dish. I cover in enchilada sauce and some low fat chedder cheese, then bake at 350 for 20 minutes. They are really good and really easy.

    Check out Hungry-Girl.com. I found out about it through people on here and they have TONS of quick low-cal meals for one (which you can obviously multiply for your family) and lots of awesome snack ideas along with guilt-free desserts and drinks! I make recipes from there all the time (or it's great to get your own ideas from) and my husband doesn't even complain about eating healthy because it tastes so good!

  • I also love the cook yourself thin cookbook. I do a lot of lasagna (from CYT) and no harm eggplant parm from hungry girl. I also do turkey chili and freeze that. There's also a great stuffed shell recipe in CYT (also freezes well). My boyfriend, who isn't on a diet, loves all these things - he just eats more than one portion. I also love all the recipes in CookingLight.
  • ps - I made the carrot cake form cook yourself thin (310 calories for 1/9th of the cake - a huge piece) and took it to a party, and got RAVE reviews.
