I have a question...
In order to lose weight, do I need to have calories left over in my daily allotment (I've heard something about the number 500..) or will I lose by meeting my 1250 calorie daily requirement?

Your daily allotment is designed to give you the calories you need to lose.
I know you might consider eating less than that to help lose weight faster, but you need to eat as close to all of those calories as possible so your body can get necessary energy.
