First 'serious' day...too many calories.

Ok , I joined a long time ago but wasn't really into it so am trying again.
Did all my calculations with a goal of losing 1.5 a week and came out to 1910 calories. I figured for my first day I would just eat normal...never felt like I ate that unhealthy but figured I was eating too much.
But after dinner, I still have nearly 600 calories left, and I usually don't snack much at night. I am confused on what's wrong, since I basically have a whole meal left...and I haven't even gone for my nightly walk yet which would yield some exercise calories.
So I guess I need some advice....here's my breakdown so far today:
Breakfast: 1 cup honey nut Cheerios, 1 cup fat free milk, 1 multivitamin: 196 calories (normally I'd have eaten a banana and apple too, but didn't have one this morning...bought some on the way home)
Lunch: broccoli/rice/chicken and cheese casserole (1.5 cups): 450 calories
Dinner: 6 oz sirloin steak, 1 cup creamy garlic pasta shells, 6 asparagus spears (steamed): 640 calories
Snacks: 1 cup flavored coffee, 1 cup regular coffee, chai tea: 62 calories
Water: 40oz.
Total; 1348 calories, 562 remaining.
That's a pretty typical day for me, So I'm not sure where I'm going wrong, but the thought of having to eat another 600 calories...I'm not even sure what I would eat. Like I said, I'm not a huge nighttime snacker or anything...maybe I need to eat something between breakfast and lunch and in the afternoon, or change around a meal. Thinking about a hard boiled egg and an apple or banana for breakfast instead of cereal.
I'm also confused why I gained so much weight if that's my typical calorie intake....granted I do have the occasional buffet overload or pizza overload or ice cream craving, but 9 days out of 10, my diet is about what I posted above.
I suppose I get a lot of calories at work...typically have a lot of junk arund or leftovers from meetings, so I have been trying to watch that more.
