Yummy Stir Fry!

Tonight I made a Shrimp Stir Fry that I had to share! It turned out really good and really hit the spot after a day of running errands (it's amazing how much needs to be done after being away for 2 months!)
The great part is that for 1 serving (two cups) is only approximately 151 Calories, with 3g Fat, 13g Carbs, 8g Fiber, 10g Protein!
If you don't like shrimp you can always do chicken or just the veggies!
Ingredients:
1 Cup Carrot Slices
1 Cup Diced Fresh Pineapple
1 Orange Bell Pepper
1 1/2 Green Bell Pepper
1 Yellow Bell Pepper
1 Orange Bell Pepper
3 Cups Medium Cooked Shrimp
1 Bunch Scallions
2 Jalapenos (optional)
1 Can Water Chestnuts
1/2 Cup Low Sodium Teriyaki Sauce
1 Cup Broccoli
Chop up all the ingredients except the shrimp they way you like yours cut and mix them together with Teriyaki sauce.
Add 1/4 Cup Teriyaki sauce to cooked shrimp and let marinate for fifteen minutes.
Grill marinated shrimp until lightly browned.
I cooked the jalapenos separate and added them to mine. Some people don’t like the spice so just have these optional on the side.
Cook all the vegetables on high until they are sauteed. This takes about 15-20 minutes.
Once all the vegetables are cooked down, add shrimp and cook another few minutes on high.
I also cooked some brown rice to go with it, mainly for my dad, but I had a little bit with mine as well (not included in the calories above)
This makes a big batch so expect left overs!
