Lowfat Eggplant Parmigiana

Well I love eggplant parmigiana, but know that it's not very low in fat or calories...so I thought I would experiment to find a healthier version. Well...I FOUND ONE!!! I coated the eggplant slices in egg whites, dipped in a mixture of flour, a little bit of parmesan cheese, salt and pepper, shook off the excess flour mixture, and then sprayed them with olive oil Pam spray. I baked them at 450 F about 5-7 minutes and then I flipped them and baked them a little longer until they were all browned. I topped them off with a pinch of mozzerella. I served them over whole wheat pasta (1 cup=200 calories) with marinara sauce (3/4 cup=90 calories). I don't know the exact calorie amount for the eggplant, but my guess is no more than 70 per cup. Plain eggplant is only 20 per cup. If any of you try this I hope you enjoy it as much as I did!!! :tongue: My husband enjoyed it enough to tell me I can do it like that from now on. One pointer I have is just to make sure that you spray both sides of the eggplant and the pan. That's what I did and I don't know how it would turn out if you don't do that. ENJOY!!! :wink:
