Athletes help! Training for my first competition!

I started MFP in February wanting to get healthy and lose weight. I started at 240. While losing 30 pounds over 4 months, I discovered that I love Brazilian Jiu-Jitsu (BJJ). I am now 210 pounds and my trainer wants me to compete in December. I would like to compete as a middleweight at 152, but could even do light heavyweight at 163. I do not want to be heavyweight above 163 because there is no top weight limit for heavyweight and some of those ladies will be really big and intimidating.

So my question is, how do I get past my current plateau so that I can lose as much of the weight as possible? I do 8 hours of BJJ training a week, 3 hours of kickboxing/boxing, and strength training 2-3 times per week. I swim leisurely for fun. I have 1 or 2 rest days a week. I eat a super clean diet of organic whole foods. I just started protein supplements and athletic supplements from GNC. I have been eating 2000 calories a day until now. Not sure if I should increase them or decrease them.

What should I do with my calories? Any recommendations on brands of multi-vitamins? And do I need to start running? Thinking like an athlete is new for me, as I have always just been interested in holistic health and never even dared to hope I could do something this amazing!
