Soft Cheese

Hi guys,

I recently bought some soft cheese and I really want to make some yummy new meals ...I am off pasta, rice, bread and potatoes...any suggestions?

(I googled this and found ONE...http://www.bbcgoodfood.com/recipes/9593/italian-stuffed-chicken sounds delicious but I would like some more!)
