Eggplant Fries w/ Heat Chipotle Sauce

Here's a recipe I came across. You can either bake these or fry them. If you're not into eggplant, you can replace it with avocado slices.

•1 Large Eggplant
•1 Tbsp Coconut Oil (If using the frying method)
•2 Eggs
•1/2 Cup Oat Flour (Or – Almond Meal)
•Salt and Pepper

1.Cut eggplant into “pinky-finger” sized fries.
2.In one bowl add 1/2 cup of oat flour or almond meal.
3.In a separate bowl place two eggs and beat until blended.
4.Add salt and pepper to the eggs as desired.
5.Take individual eggplant slices and dip them in your eggs then directly into your flour. Make sure they are completely coated in the flour.


Frying Method:
1.Heat cast-iron pan to medium-low (water should sizzle when sprinkled on the pan).
2.Add one tbsp of coconut oil to the pan and let melt.
3.Place eggplant fries in the pan and let each side ‘brown.’
4.Remove from heat and serve immediately.

Baking Method:
1.You are free to make your eggplant fries bigger when cutting if using this method. If you do make them small you’ll want to monitor the baking to make sure they don’t burn.
2.Pre-heat oven to 425 F.
3.Place eggplant fries on a parchment covered baking sheet evenly spaced.
4.Bake for 25 minutes (or until brown) flipping them once.
5.Serve immediately.


CHIPOTLE SAUCE

Ingredients:
•1/4 Cup Non-Fat Greek Yogurt
•2 Tbsp Low-Fat Cottage Cheese (Vegan Cream Cheese would be great here too)
•1 Tsp Chipotle Chili Powder
•1 Packet of Truvia (or Stevia brand of choice)

Directions:
1.Place all ingredients in a food processor, blender or magic bullet and blend until smooth.
2.Place in a dipping bowl and enjoy!
