HELP!! I cant seem to schedule anything!!!

OK so im trying to watch the caloriess in/out thing but I dont know how to accurately trck them because a normal day for me consists of waking uo at 3:30PM and going to bed at anywhere from 8am-10am. What should I do??. I know they days here reset atmidnight but I dont want to think that at 11:58 i can have pizza and at 12:05 I can eat a steak!! How have others overcome this??
