Roasted Eggplant with Feta Cheese and Kalamata Olives - PIC!

One of my MFP buddies sent me this recipe and it is to die for!!!!!

Here's her recipe....
1 medium eggplant
1/2 cup olive oil
1/2 fresh squeezed lemon juice
1 Tbsp minced red onion (I didn't use this cause I hate cutting an onion for that much)
1 clove garlic
2 tsp oregano, fresh (I used dried)
salt and pepper to taste
1/2 cup feta cheese crumbled
1/4 cup kalamata olives
4 cups baby spinach
Peel and cube eggplant, place in shallow baking pan; toss with 1/4 cup olive oil, salt to taste, bake at 400 degrees until cubes are soft but not mushy - about 25 minutes. Set aside to cool. Whisk together remaining 1/4 cup olive oil, lemon juice, onion, garlic, and oregano in small bowl. Season to taste with salt and pepper. Toss about half the dressing with the eggplant. Arrange on a bed of spinach. Sprinkle with cheese and olives, drizzle with remaining dressing. Mine came out as 320 calories per serving, 4 servings. I also added some fresh tomato.
