Modified this from a recipe on the Channel 4 Food website:
> Preheat the oven to gas mark 3
> Combine 1/2 tsp gluten-free baking powder (normal stuff wil do too if you're not fussed about the gluten), 25g cocoa powder, and 100g ground almonds in a bowl. Stor until they're mixed well.
> In another bowl put a heaped tbsp of greek yoghurt, about 50-60g of honey (around 3-5 tbsp - taste before putting int he tin and add a little more if necessary) (you can also sub this for agave nectar or maple syrup, vary the amounts accoprdingly - syrup is sweeter so you need less!), 1 tbsp vanilla extractand 3 medium eggs. Mix this all togetehr with a fork or whisk until it's mixed well (make sure you get all the honey!)
> Stir the wet ingredients into the dry until thoroughly combined
> Pour into a small cake tin or into 12 cupcake cases
> Bake for 20 mins
Voila!
Mine was in a small cake tin (roughly 8" in diameter, 1.5" deep) and 1/6 of it was:
208 cals
10 carbs
14 fat
10 protein
8 sugar
2 fiber
Came out quite bittersweet, but lovely and moist, if you like your chocolate cake like that then it'll be perfect, if you want you could maybe use more honey, add soem chocolate chips, etc. I really want to try adding some rasperries next time, they'd go so so well!
