Vegetarian/Vegan dinner options <500 calories please

I know one of my pitfalls is that I start to go into food-related-panic when I have "left" myself 500 cal or less for dinner and my brain goes blank. I cook the same meal for myself and my non-dieting partner (who is usually happy to eat whatever I cook, as long as there is no capsicum/bell-pepper involved).

We are both strict vegetarians (absolutely no animal flesh) and I try to eat a vegan diet about 50% of the time as it just makes me feel healthier and my rheumatoid arthritis does not play up as much then.

So, my question... Does anyone have any filling, tried and tested vegetarian/vegan recipes that I can have as a store for when I leave myself 500 cal or less for dinner. I would love it if these recipes are not too "diet-y" so my partner won't feel like I'm punishing her! Lol.

Thanks so much in advance. (and yes, I've left myself 500 cal for dinner tonight, so I'm keen to see what people come up with).



P.S. In case you're wondering, my ticker says 15kg lost so far, which equates to 33lb.

    Most of my dinners are in this category but my diary won't be very helpful because I often enter the individual ingredients if I'm having a salad or a wrap or something...

    For example earlier this week I had pitta pizzas - a multiseed pitta bread topped with fresh tomato, red pepper, red onion, spices and vegan "cheese" - I had two and that came to 480 cals. Wholewheat or seed tortilla wraps are a good option filled with fresh veggies and beans too, and come to about that same calorie count as long as you don't fill them with cheese or avocado or something else really high in fat...

    Soba noodles or quinoa with steamed veg and oil free homemade dressing is about 300-500 depending on the amount of noodles/quinoa you use.

    Homemade veggie sauces, curries and chillies are fairly low in calories if you don't use too much oil in them. Have with brown rice, quinoa or on their own if you like.

    I recommend Isa Chandra Moskowitch's Appetite With Reduction book - a whole book of low calorie vegan recipes! The salad dressings and sauces are especially amazing.
