Healthy fried bananas? (thai style)

Went out for Thai the other day, and had one of my favorite desserts-fried bananas and ice cream. Its so amazingly good-if youve never had it, its badically bananas coated in batter and deep fried, then served with vanilla or coconut ice cream.

I want to do a healthy version of this. Banas-healthy. Batter-i'm sure i can mess around with the recipes. Ive found online and come up with one thats not too caloric or unhealthy. The proper consistency is very puffy and cake-like, but at the same time, light and a little airy. The batter is thick looking once cooked-its not a thin layer. Ice cream-going to use frozen yogurt.

My sticking point is the frying :/ there is just no way i know of to deep fry something without adding a lot of fat and calories. I considered baking them, but i think the bottom wouldnt raise and puff up and cook right. Put them in a pan with some non stick spray? I think I'm going to give it a try tomorrow, but i just wanted to throw it out there and see if anyone else has any ideas. I googled low cal and healthy thai fried bananas, but came up with nothing.

    Try a cooking spray? I use a grapeseed oil cooking spray whenever I don't need to add fat/flavor to something I'm frying and just want it to not stick to the pan.

    coconut oil is a great, tasty, and healthy alternative to all other oils

    unfortunately it is the deep frying you need to get them puffy & golden :(

    I have tried a few variations of this (healthy and unhealthy) over the years, but the one that seems to work the best is just sliced banana in half (longways) this works better if they are not too ripe. Soften 1-2 tsp of butter and stir in a little bit of brown sugar.

    Fry on a grill pan (I prefer the type of pan you use for steaks that leave the lines on the meat, but a normal non-stick frying pan will work fine) quickly over medium heat for a couple of seconds each side so the sugar caramelizes but doesn't burn. Then sprinkle with some cinnamon and serve with low-fat icecream.

    Not quite the same thing but still very tasty :drinker:

    Cersela- yep, im going to try the cooking spray, and I'll report back if it works :)

    Omsy828- , i know coconut oil is the good-for-you oil, and i do keep it in the house. I just dont want to add the calories, if there's another way to do it. If i do use it, i'm not sure how to calculate the added calories-i mean, how much of the oil will each banana piece absorb-I'd guess maybe a teaspoon, but i dont know if that's right. I dont mind using coconut oil if i have to (it'll just have to be a once-in-a-while treat if i do that), but I'd like to know how many cals it adds.

    Rayman79- i've seen that recipe all over the net, but I'm trying to come up with a version of the battered thai fried bananas, which are totally different :)
