Things to do with veg

I used to do a cauliflour cheese, but what can I do that doesn't involve cheese - apart from a curry.

And what do you do with celeriac apart from grating it into a salad?

Any interesting ideas for cabbage?

    Cabbage -

    I love cabbage, one of my favorite veggies. Like it raw and cooked.

    Raw -

    Shred cabbage, carrots, red onion and throw in some brocolli slaw in a large bowl.
    Add slivered almonds
    Add chia seed and hemp hearts
    Add in home made asian ginger dressing (recipe below)
    Mix together and eat.
    (I eat this as a meal and as a side)

    Asian Ginger Dressing recipe
    Garlic - Raw - 1 Clove
    Ginger root - Raw, 6 tsp
    Oil - Olive, 0.75 cup
    Coconut Amino Acids - 4 tbsp
    Local - Natural Raw Honey, 3 tbsp
    Water - Municipal, 0.25 cup

    Put in shaker bottle and shake



    Cooked

    Shred cabbage
    Throw in casserole dish
    Add 2 tbsp bacon fat (grease that bacon made in the pan)
    1 pound of beef smoked sausage cut in slices (I get fresh made from local meat market)
    Salt and pepper to taste
    Couple splashes of home made chicken stock

    Cover with a lid and throw in the oven at 350 for 35 minutes, then take lid off, stir and leave in oven for 10 minutes to brown the cabbage and sausage.

    Great and quick meal.

    Do you eat zucchini and yellow squash?

    1 medium zucchini sliced in medium slices
    2 yellow squash sliced into medium slices
    1 red bell pepper sliced
    1 medium onion sliced thinner
    1/2 cup home made chicken stock
    1 tablespoon coconut oil

    Melt coconut oil in pan over medium high
    toss in sliced veggies
    add salt and pepper and stir fry for about 5 minutes
    Add 1/2 cup chicken stock and stir again
    Cover the pan and cook down until slightly soft.

    Why avoid cheese? It's good for you. Make a cheese sauce with 2 T cornstarch, 1 cup milk, and a serving of cheddar cheese. It will contribute calcium to your diet.

    Celeriac sure makes a great salad! I hear that you can make it into a cream soup too. Try googling a recipe for cream of celeriac soup. You could also use it like a mashed potato. You can do the same with cauliflower, I believe Mashed cauliflower with real cream is on the South Beach diet, try googling that. Both are better choices than mashed potato, but I still eat potatoes, I have too much Irish in me not to. LOL.

    There are SO many great things to do with vegetables. For celeriac specifically, have you tried celeriac mash instead of potatoes? It's lower in calories, and tastes just as good. Here's a recipe that uses both: http://www.cookipedia.co.uk/recipes_wiki/Potato_and_celeriac_mash

    For other vegetables, try adding things like peas/asparagus/mushrooms, to risottos,
    or vegetable stir fries, for starters!

    I have been eating more vegan foods, although I haven't yet been able to give up cheese completely there are health benefits to a vegan diet and I have been reading a lot of the "Thrive Diet" books and educating myself about that lieftsyle.

    As for cauliflower, I have made a mash with them that is very yummy. I steam the cauliflower then use a hand blender to puree it with olive oil and pepper with a tiny bit of sea salt (sometimes I add a bit of hot water to get the right consistency)

    I would suggest getting a vegan cookbook from the library and trying out some recipes to find ones that you like.

    I like cauliflower roasted in the oven, with a bit of Olive Oil, salt and pepper. I usually sprinkle it with a bit of grated romano cheese, but you don't have to - it's delicious without.

    I have used celeriac to substitued up to half of the potatoes when mashing. .
