Mexican Mix -- Yummy and Filling
(I know the name needs work)
I made this recipe up with what we had on hand in the house and my husband and friends say it's a hit! It was a great way to get my husband to eat ground turkey instead of ground beef. We have eaten it all this week as taco salad meat, in wraps as burrito filling, as taco meat, on nachos, and served it to friends as a dip for chips.
Mexican Mix
Ingredients:
1lb lean ground turkey
1 Green pepper
1 Onion
1 packet Taco seasonings (I used 40% Less Sodium Taco Seasonings)
1 Can of black beans, drain and rinse
1 can of corn, drain and rinse
1 can diced green chilis
1 can refried beans (I used fat free kind)
½ cup medium salsa
¾ cup water
Directions:
1. Dice green pepper and onion.
2. Place pepper and onions in fry pan with ground turkey and cook until turkey is browned
3. Follow directions on the Taco seasoning packet—add water and seasonings and stir. Sauce will thicken.
4. On medium to medium low heat (once the sauce in pan is thickened) add: black beans, corn and diced green chilis to pan and continue stirring.
5. Add refried beans in spoonfuls and mix into pan. The refried beans should dissolve into the mixture as you stir.
6. Add ½ cup of salsa to pan and stir until mixture is consistent.
7. Enjoy in salad, taco, burrito, nachos, etc. :bigsmile:
I estimate this makes 12 servings (½ cup sized serving).
I found ½ cup in a flat out wrap to be a really filling, lower calorie, lunch, and with the beans it leaves you full for a long time.
Per serving:
142 calories

2g fat
14g protein

It's really yummy! Our lactose-intolerant friend loved it because the refried beans make it creamy without using dairy. I hope you like it!0
