Oaty Peanut Butter and Chocolate Sandwich Cookie
SurrenderToNothing

I was experimenting with snacks earlier, because I didn't want any fruits and was getting a little wary of my addiction to wholemeal bread with peanut butter. I haven't really got exact quantities of ingredients for these, as it was a little improv and I didn't make all that much, so I'll just write down my ingredients. It'll mainly be common sense.
-Rolled oats
-Honey
-Cocoa powder
-Water
-Peanut butter
I did a ratio of honey:oats that meant that the honey coated the oats, then stirred in cocoa powder so it did the same but wasn't completely overwhelming. Add enough water just so it turns kind of sticky- don't want to be soupy! You want to be able to roll it into balls, which you then flatten onto a sheet pan. I did these in a whoopee pie tin, but it doesn't make a difference. Just put them in the oven for a while until they firm up. Mine were still a little soft in the middle. Then just spread peanut butter on half of them and sandwich them together with the other half!
