Case of the "Just One Bite"

How bad is it to have a bite of your son's ice cream sandwich, or 2 sweet potato tortilla chips (organic, three ingredients total), or a lithe nibble of something sweet/salty once a day to curb your sweet tooth? Should I log this in the food diary somehow?

Go ahead and log it, especially in the beginning, so you can get a good overview of exactly where you're taking in your calories. One bite won't have many calories, but add up a bite here and a bite there over the course of the day, and you may be surprised.
Something like one bite of an ice cream sandwich - try logging it as .1 serving (1/10th of the sandwisch) or even .05 (1/20th of the sandwich).
ETA:
I did a quick search out of curiosity, and there are about 27 calories in those 2 chips ( I used Trader Joes' brand), and 18 calories in 1/10th of a generic ice cream sandwich.0
