Hi. Anyone have any healthy slow cooker recipes for me please? Mine usually include things like cream and wine... Hubby is finally trying to lose weight, so I want to help him as much as possible with nice, but healthy dinners. Also fed up of cooking, so would like to do large batches and into freezer - hence slow cooker.

    There have been a lot of posts about slow cookers in the past. If you click on search and type in slow cooker or crockpot you should see a lot of them.

    My current obsession:

    Lazy Chicken
    -frozen chicken pieces
    -a bottle of your favorite sauce/salad dressing

    Cook on low 8 hours, shred with a fork.

    I use a 4lb bag of boneless skinless breasts, this makes about a week's worth for me. I was using tomato/pasta sauces at first, and most recently I used a bobble of Catalina Lite dressing. It's delicious! The chicken came out so moist and flavorful. I'm thinking light Ranch next! :)

    For some reason EVERYTIME I slow cook the meat comes out dry... or the dish is like a soup. I would love to know of any foolproof recipes.

    Crock Pot Santa Fe Chicken

    Servings: 8 servings • Size: 1 cup • Old Points: 3 pts • Points+: 4 pts
    Calories: 190 • Fat: 1.5 g • Fiber: 5.6 g • Carbs: 23.1 g • Protein: 21 g

    Ingredients:
    24 oz (1 1/2) lbs chicken breast
    14.4 oz can diced tomatoes with mild green chilies
    15 oz can black beans
    8 oz frozen corn
    1/4 cup chopped fresh cilantro
    14.4 oz can fat free chicken broth
    3 scallions, chopped
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp cumin
    1 tsp cayenne pepper (to taste)
    salt to taste

    Directions:
    Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot . Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice or in a tortilla (extra pts)

    Hands down the favorite in our house,

    1 Roaster chicken
    1/2 packet dry onion soup mix

    Cook on high about 5 hours or low about 10. Fall off the bone moist.

    My personal favorite & no fat

    4 or 5 boneless/skinnless chicken breasts
    1 jar of salsa

    Again cook about 5 hours on high or 10 on Low. Take a fork & shred the chicken like you would pulled pork.
